San Francisco sourdough: Chewy white bread with tangy starter, yeasty aroma, and zesty chopped onion topping.
Ingredients:
  • 4.75 cups bread flour
  • 3 tablespoons white sugar
  • 2.5 teaspoons salt
  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm milk
  • 2 tablespoons margarine, softened
  • 1.5 cups sourdough starter
  • 1 extra large egg
  • 1 tablespoon water
  • 0.25 cup chopped onion
Instructions:
  • In a large bowl, mix together 1 cup of flour, sugar, salt, and yeast. Stir in warm milk and margarine, followed by the starter. Gradually mix in the remaining 3 3/4 cups of flour; adjust as needed based on the humidity levels.
  • Transfer the dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic. Place the dough in a greased bowl, turning it once to coat the surface with oil, then cover it. Let it rise until doubled in volume, approximately 1 hour.
  • Gently press down on the dough, cover, and rest for 15 minutes. Divide into two portions and shape them into loaves. Arrange the loaves on a greased baking pan. Let them rise until doubled in size, approximately 1 hour.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Combine egg and water in a small bowl, mix well. Brush over the tops of the loaves and sprinkle with onion.
  • Bake the loaves in the preheated oven for about 30 minutes until they are golden brown and fully cooked. Use an instant-read thermometer to check if the center of a loaf reaches 190°F (88°C).
