Grilled Santa Maria tri-tip with Chef John's signature spice rub, charred outside, juicy and pink inside.
Ingredients:
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons garlic powder
  • 1.5 teaspoons paprika
  • 1 teaspoon dried rosemary
  • 0.25 teaspoon cayenne pepper
  • 1 (2 1/2 pound) beef tri-tip roast
  • 0.33333334326744 cup red wine vinegar
  • 0.33333334326744 cup vegetable oil
  • 4 cloves crushed garlic
  • 0.5 teaspoon Dijon mustard
Instructions:
  • Combine salt, black pepper, garlic powder, paprika, onion powder, rosemary, and cayenne pepper in a bowl and mix well.
  • Place the tri-tip in a glass baking dish and generously coat it on all sides with the flavorful spice mixture. Seal the dish with plastic wrap and let it marinate in the fridge for 4 hours for ultimate flavor infusion.
  • Mix vinegar, vegetable oil, crushed garlic, and Dijon mustard in a sealable container. Shake vigorously until well combined.
  • Take the tri-tip out of the refrigerator and allow it to rest at room temperature, uncovered, for 30 minutes.
  • Heat your outdoor grill on high heat and lightly oil the grates.
  • Place the tri-tip on the preheated grill and generously brush with the flavorful vinegar mixture. Grill for about 4 minutes, then flip and baste. Continue flipping and basting every 4 minutes until the tri-tip is slightly firm but still pink and juicy at the center, for a total of 25 to 30 minutes. Use an instant-read thermometer to ensure the internal temperature reaches 130°F (54°C). Allow the meat to rest for at least 10 minutes before slicing for optimal flavor.
