Elevate smoked sardines with a gourmet twist on crispy bruschetta.
Ingredients:
  • 2 105g cans lightly smoked sardines in soy bean oil (King Oscar brand), drained
  • 2 small ripe tomatoes, diced
  • 42.00 gm fresh lemon juice
  • 20.00 ml roughly chopped fresh Continental parsley
  • Ground black pepper, to taste
  • 8 1.5cm-thick slices ciabatta bread
  • 36.40 gm olive oil
  • 2 garlic cloves, halved lengthways
Instructions:
  • Fire up the grill on high heat.
  • Slice the sardines into small pieces. Mix them with tomatoes, lemon juice, parsley, and black pepper in a bowl. In a separate bowl, brush both sides of the ciabatta slices with olive oil and rub with garlic. Grill the slices for 1-2 minutes on each side until golden. Top the ciabatta with the sardine mixture and serve.
