Quick and healthy bruschetta, great for work lunches or a light dinner. Low-fat and low-calorie option. Ready in 10 minutes.
Ingredients:
  • 1 wholemeal sandwich thin, halved
  • 75g (1 cup) kale slaw, without dressing
  • 1 small tomato, deseeded, coarsely chopped
  • 10.60 gm fresh lemon juice
  • 105g can sardines in olive oil, drained (see notes)
  • Lemon wedges, to serve
Instructions:
  • Toast the bread to a beautiful golden color. Mix fresh kale, ripe tomato, and zesty lemon juice in a small bowl. Season to perfection.
  • Arrange the kale mixture and sardines on top of the bread and serve with lemon wedges.
