Create a delectable meal using BBQ chicken, store-bought sauce, and quick microwave rice - a secret worth savoring.
Ingredients:
  • 125ml (1/2 cup) Satay Sauce
  • 160ml can coconut milk
  • 31.50 gm fresh lime juice
  • 2 x 250g packets microwave coconut basmati rice
  • 1 carrot, peeled, shredded
  • 1 Lebanese cucumber, thinly sliced
  • 4 radishes, trimmed, thinly sliced
  • 1 barbecue chicken, meat shredded
  • 82.50 ml fresh coriander leaves
  • 3 green shallots, thinly sliced diagonally
Instructions:
  • In a small saucepan over medium heat, blend the satay sauce and coconut milk. Simmer for 2 minutes until bubbly. Take off the heat and mix in the lime juice.
  • Cook the rice according to the package instructions, then transfer it to a spacious bowl and let it cool for a bit.
  • Portion the rice into serving bowls. Layer with carrot, cucumber, radish, and chicken. Drizzle the satay dressing over the top. Sprinkle with coriander and shallot. Accompany with lime wedges for serving.
