Ingredients:
  • 6 (about 750g) chicken thigh fillets, halved, fat trimmed
  • 1 250ml can mild satay sauce (Ayam brand)
  • 9.20 gm olive oil
  • 3 medium carrots, peeled, diagonally thinly sliced
  • 200g green beans, topped, tailed
  • 80g (1 cup) bean sprouts, trimmed
  • Boiling water
  • 21.00 gm fresh lemon juice
Instructions:
  • Coat the chicken in 160mls (2/3 cup) of satay sauce in a shallow dish. Allow it to marinate for 10 minutes before proceeding.
  • Heat a chargrill or frying pan over medium-high heat. Brush with oil and cook the chicken for 3-4 minutes per side, or until cooked to your preference.
  • Steam carrots and beans until tender crisp. Place bean sprouts in a bowl and cover with boiling water for 1 minute, then drain. Heat satay sauce and lemon juice in a saucepan until heated through. Serve over chicken and vegetables.
