Whip up irresistible satay chicken pizzas with this crowd-pleasing recipe!
Ingredients:
  • 480g cooked chicken
  • 150g satay sauce
  • 200g thick Greek-style yoghurt
  • 4 x 15cm plain pizza bases
  • 200g pizza cheese (see note) (or a mixture of grated mozzarella and cheddar)
  • 1 Lebanese cucumber, grated
  • 250.00 ml flat-leaf parsley, chopped
  • 82.50 ml chopped coriander leaves
  • 82.50 ml roughly chopped mint leaves
  • 2 tomatoes, seeds removed, chopped
  • 1 red onion, chopped
  • 21.00 gm lemon juice
  • 18.20 gm olive oil
  • Mango chutney, to serve
Instructions:
  • Preheat your oven to 200°C. Mix chicken, satay sauce, and 3 tablespoons of yogurt in a bowl. Spread the mixture on pizza bases, top with cheese, and bake for 5-6 minutes or until the bases are golden and the cheese is melted.
  • Drain the cucumber well using a sieve, then mix it with the rest of the yogurt and 2 tablespoons of mint. Season with salt and pepper. Combine the remaining herbs, tomatoes, onion, lemon juice, and olive oil in a bowl. Top the pizzas with some of the salad mixture and serve with mango chutney and cucumber raita.
