Thai chicken pizza

Elevate your pizza with gourmet Thai chicken topping.
Ingredients:
  • 2 wholemeal Lebanese bread
  • 66.88 gm satay sauce
  • 300g (1 large) chicken breast fillet
  • 18.40 gm canola oil
  • 1 red capsicum, seeded and sliced
  • 1 red onion, cut into wedges
  • 165.00 ml low-fat mozzarella cheese, grated
  • Coriander leaves, to serve
Instructions:
  • Preheat your oven to 200C and prepare two baking trays with parchment paper.
  • Place a piece of bread on each oven tray and generously spread with delicious satay sauce. Bake for 5-10 minutes until perfectly golden and fragrant.
  • Preheat a high-heat char-grill. Brush chicken with oil and grill for 3-4 mins per side until fully cooked. Rest chicken on a plate, covered, before serving.
  • In a bowl, coat capsicum and onion with remaining oil. Char-grill for 1-2 mins. Transfer grilled veggies onto bread. Slice chicken and distribute evenly on the breads. Top with cheese.
  • Bake until cheese is melted, then sprinkle with fresh coriander before serving.
