Thai Chicken Pizza with Carrots and Cilantro

Thai-inspired chicken and peanut pizza with cilantro.
Ingredients:
  • 1 (12 inch) pre-baked Italian pizza crust
  • 0.5 cup prepared Thai peanut sauce*
  • 2 tablespoons peanut butter
  • 2 cups shredded chicken*
  • 2 medium carrots, peeled and grated
  • 3 green onions, thinly sliced
  • 0.25 cup chopped roasted peanuts
  • 0.25 cup chopped fresh cilantro
Instructions:
  • Preheat oven to 450 degrees with the rack on the lowest position. Place the crust on a cookie sheet. Combine peanut sauce with peanut butter, then spread 2/3 of the mixture over the pizza crust. Toss the shredded chicken with the remaining 1/3 of the sauce and spread it over the pizza.
  • Bake for 10 to 12 minutes until the crust is golden and crisp. Then, sprinkle carrots, green onions, peanuts, and cilantro on top. Cut into 6 slices and serve.
