Impress at the barbecue with these irresistible sweet and sticky satay skewers.
Ingredients:
  • 31.50 gm Asia soy sauce
  • 10.80 gm honey
  • 1 tsp ground turmeric
  • 700g chicken tenderloins, halved lengthways
  • 266.00 gm jasmine rice
  • 6 green onions, sliced diagonally
  • 267.50 gm satay sauce
  • 63.13 gm coconut milk
  • Steamed Asian greens, to serve
Instructions:
  • Submerge skewers in water and let them soak for 30 minutes.
  • In a ceramic bowl, mix together soy sauce, honey, turmeric, garlic, and oil. Add chicken pieces and ensure they are well coated. Thread the chicken onto skewers and spoon over the marinade. Cover and refrigerate for 1 hour, if possible.
  • Prepare rice according to package instructions, ensuring each grain is fluffy and separate. Mix in the savory onions for added flavor.
  • In a small saucepan over medium heat, combine satay sauce and coconut milk. Stir and cook for 2 minutes, or until warmed.
  • Preheat a barbecue grill or chargrill to medium heat. Lightly coat skewers with oil. Grill for 6 minutes, turning occasionally, until fully cooked. Arrange skewers on plates and generously drizzle with satay sauce. Serve alongside steamed rice and stir-fried Asian greens.
