Mouthwatering chicken satay skewers with peanut sauce make a perfect Thai-inspired dish for any occasion. Soak bamboo skewers, pack on chicken tightly, and toast coriander seeds for maximum flavor. Cook on barbecue or stovetop for a tasty meal.
Ingredients:
  • 2 tsp coriander seeds
  • 130g (1/2 cup) crunchy peanut butter
  • 32.00 gm brown sugar
  • 42.00 gm soy sauce
  • 30.00 ml lime rind, finely grated
  • 42.00 gm lime juice
  • 9.15 gm fish sauce
  • 1 long fresh red chilli, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 tsp sesame oil
  • 1 tsp ground turmeric
  • 80ml (1/3 cup) coconut cream
  • 500g chicken thighs, cut into 3cm pieces
  • Steamed rice, to serve (optional)
  • Lime wedges, to serve (optional)
  • 60ml (1/4 cup) rice wine vinegar
  • 20.00 gm caster sugar
  • 2 Lebanese cucumbers, halved, deseeded, thinly sliced diagonally
  • 1.20 gm salt
  • 40.00 ml fresh coriander, chopped
Instructions:
  • Combine vinegar and sugar in a bowl, stirring until sugar is fully dissolved. Add in the cucumber and salt. Let sit for 30 minutes, stirring occasionally, until lightly pickled. Drain and combine with coriander in a bowl.
  • Toast coriander seeds in a skillet over medium heat for 1-2 minutes until fragrant and toasted. Crush seeds in a mortar with a pestle.
  • In a food processor, blend together peanut butter, sugar, soy sauce, lime rind and juice, fish sauce, chili, garlic, oil, 1 tsp crushed coriander, and half the turmeric until smooth. Transfer the mixture to a saucepan and warm over low heat for 1-2 minutes. Stir in the coconut cream.
  • Preheat a barbecue flat plate over medium heat. Mix the remaining turmeric and coriander in a bowl, then add the chicken and coat it well. Skewer about 3 chicken pieces onto each of the 12 presoaked bamboo skewers.
  • Grill the skewers for 3-4 minutes on each side until fully cooked. Serve with optional sauce, cucumber, rice, and lime.
