Quick cucumber chilli pickle recipe

Crunchy cucumber pickles, perfect with satay chicken skewers for a delicious South-East Asian spread.
Ingredients:
  • 60ml (1/4 cup) rice wine vinegar
  • 5.00 gm caster sugar
  • 2.40 gm sea salt flakes
  • 1 long fresh red chilli, finely chopped
  • 2 Lebanese cucumbers, thinly sliced
Instructions:
  • In a bowl, mix vinegar, 60ml (1/4 cup) water, sugar, and salt until sugar dissolves. Add chilli and cucumber, making sure they are coated well. Let it pickle for 15 minutes. Drain and transfer to a serving bowl.
