Take your taste buds on a journey to South-East Asia with savory-sweet chicken skewers over a bed of flavorful noodles.
Ingredients:
  • 20.00 gm caster sugar
  • 60ml (1/4 cup) rice wine vinegar
  • 125ml (1/2 cup) hoisin sauce
  • 41.60 gm smooth peanut butter
  • 12 (about 700g) chicken tenderloins
  • Cooked rice vermicelli
Instructions:
  • In a small saucepan over medium heat, combine sugar, vinegar, 80ml (1/3 cup) water, hoisin sauce, and peanut butter. Stir and cook until smooth. Remove from heat and set aside 185ml (3/4 cup) of the sauce for basting the chicken. Pour the rest into a serving bowl.
  • Heat an oiled chargrill pan over medium-high heat. Skewer chicken tenderloins onto 12 pre-soaked bamboo skewers. Grill chicken, brushing with sauce and turning occasionally, for 8-10 minutes until cooked. Serve with dipping sauce and noodles.
