Chicken Satay with Peanut Sauce

Succulent chicken skewers with sweet and spicy peanut sauce, perfect with white rice.
Ingredients:
  • 0.5 cup unsweetened coconut milk
  • 2 teaspoons yellow curry powder
  • 1 teaspoon white sugar
  • 1 teaspoon fish sauce
  • 0.5 teaspoon granulated garlic
  • 1 pound skinless, boneless chicken breasts, cut into strips
  • 8 skewers
  • 2 tablespoons olive oil
  • 0.5 cup chicken broth
  • 0.25 cup creamy peanut butter
  • 1 tablespoon lime juice
Instructions:
  • In a bowl, mix 1/2 cup of coconut milk with 2 teaspoons of curry powder, 1 teaspoon of sugar, 1 teaspoon of fish sauce, and some granulated garlic. Add chicken pieces and ensure they are evenly coated. Cover and refrigerate for a minimum of 2 hours.
  • Pat chicken dry and slide onto skewers after shaking off excess marinade.
  • In a large skillet over medium-high heat, heat olive oil. Cook chicken skewers until golden and cooked through, about 3 to 4 minutes per side.
  • In a small saucepan over medium heat, gently simmer the remaining 3/4 cup coconut milk. Stir in the remaining 3 teaspoons curry powder and let it simmer for 4 minutes. Add chicken broth, peanut butter, lime juice, 3 teaspoons sugar, and 3 teaspoons fish sauce; simmer for an additional minute. Serve the dipping sauce with chicken skewers.
