Grilled chicken satay with mango-peanut dipping sauce

Irresistible satay skewers by Chef Curtis Stone will delight all tastes.
Ingredients:
  • 750g chicken breast
  • 40.00 ml finely chopped fresh coriander
  • 36.40 gm olive oil
  • 2 tsp lime zest
  • 2 cloves garlic, crushed
  • 1 tsp sesame oil
  • 1.20 gm sea salt
  • 8 thin lime wedges, for serving
  • 1 ripe mango, peeled, pitted, very coarsely chopped
  • 130.00 gm smooth peanut butter
  • 65.63 gm fresh lime juice
  • 32.00 gm firmly packed brown sugar
  • 19.20 gm reduced salt soy sauce
  • 30.00 ml lime zest
  • 21.60 gm hoisin sauce
  • 9.15 gm fish sauce
  • 1 tsp sambal oelek
  • 1 large clove garlic, peeled
  • 1/2 tsp sesame oil
Instructions:
  • Marinate the chicken in a flavorful mixture of coriander, oil, lime zest, garlic, sesame oil, and salt in the fridge for at least 30 minutes and up to 8 hours.
  • While the main dish cooks, make the sauce: Blend all ingredients in a blender or food processor on high speed until extra smooth. Adjust spiciness by adding more sambal oelek to suit your taste.
  • Preheat the barbecue or grill pan on high heat. Skewer a slice of chicken onto each skewer. Grill in 2 batches for about 1 1/2 minutes per side until charred and juicy.
  • On each of 8 plates, elegantly spoon a generous portion of sauce. Add 3 skewers and 1 lime wedge beside the sauce. Place any extra sauce in a small bowl to accompany the skewers. Serve and enjoy!
