Grilled Indonesian chicken satay served with tasty peanut dipping sauce.
Ingredients:
  • 20 wooden skewers
  • 6 boneless, skinless chicken breasts, cut lengthwise into strips
  • 6 tablespoons soy sauce
  • 6 tablespoons tomato sauce
  • 2 tablespoons peanut oil
  • 4 cloves garlic, minced
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 1 tablespoon peanut oil
  • 0.25 onion, finely chopped
  • 1 clove garlic, minced
  • 8 tablespoons peanut butter
  • 3 tablespoons white sugar
  • 2 tablespoons soy sauce
  • 1 cup water
  • 0.5 lemon, juiced
Instructions:
  • Place wooden skewers in a shallow dish and submerge them in water. Allow them to soak for 20 minutes.
  • Add chicken strips to a bowl. In a separate small bowl, mix soy sauce, tomato sauce, peanut oil, garlic, pepper, and cumin. Pour the mixture over the chicken strips and ensure they are fully coated. Let it marinate for 15 minutes.
  • To prepare the peanut sauce, heat 1 tablespoon of oil in a skillet over medium-high heat. Sauté the onion and garlic until the onion is soft and translucent, about 4 minutes. Stir in the peanut butter, sugar, soy sauce, and water until well combined. Simmer until the sauce slightly thickens, about 5 minutes. Finish by stirring in the lemon juice and then remove from heat.
  • Prepare the grill by preheating it to high heat and lightly oiling the grate. Skewer each chicken strip onto a skewer.
  • Grill skewers for 10 minutes, turning once halfway through. Serve satay skewers with peanut dipping sauce immediately.
