Ginger-soy marinated grilled chicken satay, ideal for entertaining!
Ingredients:
  • 1 pound chicken tenders
  • 0.5 cup soy sauce
  • 2 tablespoons freshly grated ginger
  • 2 teaspoons fish sauce
  • 16 thin metal skewers
  • 1 tablespoon cornstarch
  • 1 scallion, chopped
Instructions:
  • Cut chicken breast in half horizontally to create thin cutlets. Gently poke the surface with a fork or knife to enhance tenderness.
  • Mix soy sauce, brown sugar, ginger, fish sauce, and lime juice in a large bowl, resealable plastic container, or large zip-top bag. Add chicken tenders, ensuring they are fully coated with the marinade. Refrigerate for at least 2 hours.
  • Get your outdoor grill nice and hot, and give the grate a light coating of oil. Take the chicken out of the marinade and skewer it onto metal skewers.
  • Simmer the marinade with cornstarch in a saucepan until it thickens, about 3 to 4 minutes. Pour the sauce into a small bowl for dipping.
  • Grill skewers until perfectly cooked through, around 5 minutes on each side. Top with fresh scallions and serve with a side of sauce.
