Grilled Orange-Ginger Spatchcock Chicken: Juicy chicken cooked evenly with a flavorful marinade.
Ingredients:
  • For the chicken:
  • 1 (4-pound) chicken
  • Salt and pepper, to taste
  • Oil, for the grill
  • For the marinade:
  • 1 orange, zest and juice (about 1/2 tablespoon zest and 1/3 cup juice)
  • 1 lemon, juiced (about 2 tablespoons)
  • 3 tablespoons finely chopped fresh ginger
  • 1 tablespoon whole coriander seeds, crushed (or 1/2 teaspoon ground coriander)
  • 2 teaspoons paprika
  • 1/4 teaspoon salt
Instructions:
  • To spatchcock the chicken, use kitchen shears or a sharp knife to cut along each side of the backbone, removing it (which can be saved for stock). Flip the chicken over onto the cutting board, breast side up, and press firmly on the breastbone to flatten it. Pat the chicken dry, season with salt and pepper on both sides, and place it in a baking dish.
  • Prepare the flavorful marinade by combining orange zest, orange juice, lemon juice, ginger, olive oil, honey, coriander, paprika, and salt in a small bowl. Drizzle the marinade over the chicken, ensuring it is fully coated. Cover with plastic wrap and refrigerate for at least 2 hours or overnight, ensuring the chicken is marinated evenly by turning occasionally.
  • Get the grill ready: For a gas grill, heat one side to high and the other to low. Aim for 450F. For a charcoal grill, set up a two-level fire by placing two-thirds of the charcoal on one side and the rest on the other. Once the grill is hot, oil the grates using tongs and a small folded paper towel dipped in oil.
  • Grill the chicken by starting with the skin side up on the cool side of the grill. After 20 minutes, rotate the chicken so the breast side is facing the hot side. Continue grilling until the internal temperature reaches 165F when measured in both the thigh and breast. Check the heat and size of the bird for accurate cooking time. Enjoy the juicy results!
  • Achieve a crispy exterior: After cooking the chicken thoroughly, gently place it on the hot grill. Grill for 1 to 3 more minutes until the skin becomes golden and crispy.
  • Allow the chicken to rest: Place the chicken on a cutting board and let it rest for 10 minutes before slicing and serving.
