Grilled spatchcocked chicken marinated in Greek flavors, grilled to juicy perfection.
Ingredients:
  • 1 cup extra virgin olive oil
  • 0.25 cup lemon juice
  • 3 tablespoons chopped fresh oregano
  • 3 cloves garlic, minced
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon dried tarragon
  • 1 (4.5 pound) whole chicken, spatchcocked
  • salt and ground black pepper to taste
Instructions:
  • Combine olive oil, lemon juice, oregano, garlic, rosemary, and tarragon in a measuring cup and whisk thoroughly.
  • Prepare the grill by heating it to medium-high heat and greasing the grate lightly.
  • Lay the chicken on a rimmed baking sheet, drizzle half of the oil mixture over it, keeping the rest aside. Massage the oil into the chicken skin using your hands, then season with salt and pepper.
  • Grill chicken skin-side up over indirect heat for 50 minutes, then grill over direct heat for an additional 5 minutes. Flip chicken skin-side down and grill until crispy, about 5 more minutes. Transfer to serving platter and rest for 10 minutes before serving.
  • Drizzle the flavorful oil mixture over the chicken and carve it before plating for a delicious presentation.
