Tender grilled chicken satay skewers with flavorful homemade peanut sauce infused with ginger, garlic, and curry.
Ingredients:
  • 2 tablespoons creamy peanut butter
  • 0.5 cup soy sauce
  • 0.5 cup lemon or lime juice
  • 1 tablespoon brown sugar
  • 2 tablespoons curry powder
  • 2 cloves garlic, chopped
  • 1 teaspoon hot pepper sauce
  • 6 skinless, boneless chicken breast halves - cubed
  • wooden skewers, soaked in cold water
Instructions:
  • Make the marinade by mixing peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic, and hot pepper sauce in a bowl. Add chicken breasts, toss to coat, cover, and chill in the fridge for 2 to 4 hours.
  • Get your outdoor grill fired up to high heat and give the grate a light coating of oil.
  • Thread the marinated chicken onto skewers after shaking off any excess marinade, and discard the remaining marinade.
  • Grill the chicken on high heat until it's fully cooked and no longer pink inside, approximately 5 minutes per side.
