Chicken satay skewers

Whip up flavorful, low-cal chicken satay skewers with minimal ingredients.
Ingredients:
  • 270ml can light coconut milk
  • 130.00 gm firmly packed reduced-fat chunky peanut butter
  • 68.75 gm sweet chilli sauce
  • 21.00 gm salt-reduced soy sauce
  • 600g chicken tenderloin
  • White long-grain 90-second rice, to serve
  • Steamed vegetables, to serve
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. Combine coconut milk, peanut butter, sweet chilli sauce, and soy sauce in a microwave-safe bowl. Heat on high for 1 minute 30 seconds, stir, then continue heating until smooth. Pour three-quarters of the mixture into a warm, covered jug.
  • Skewer chicken pieces and place them on a foil-lined baking tray. Brush with coconut milk mixture and bake for 15 minutes. Turn skewers, brush with more coconut mixture, and bake until golden brown and fully cooked, about 15 more minutes. Enjoy!
  • Present skewers alongside a drizzle of the remaining coconut milk mixture, along with a side of rice and vegetables.
