Whip up quick and tasty chicken satay skewers with spicy noodle salad for a flavorful weeknight dinner in 30 minutes!
Ingredients:
  • 200g dried rice stick noodles
  • 125g snow peas, thinly sliced
  • 42.00 gm lime juice
  • 24.40 gm fish sauce
  • 22.00 gm sweet chilli sauce
  • 36.40 gm peanut oil
  • 1 large carrot, cut into noodles (see notes)
  • 1 long red chilli, thinly sliced
  • 165.00 ml coriander leaves
  • 750g Chicken Thigh Fillets, cut into 2cm pieces
  • 34g pkt Chicken Satay Skewers Recipe Base
  • 70g peanut butter
  • 165ml can light coconut milk
  • 20.00 ml kecap manis
Instructions:
  • Boil rice noodles in a saucepan for 2 mins, then add snow peas for the final 1 min. Drain.
  • In a small bowl, mix lime juice, fish sauce, sweet chilli sauce, and half of the oil. In a large bowl, combine the rice noodle mixture, carrot, and half of the chilli and coriander. Add the dressing and toss everything together.
  • Skewer the chicken onto soaked bamboo sticks. Mix 1 tablespoon of the Continental Chicken Satay Skewers Recipe Base with the rest of the oil in a small bowl. Brush the mixture over the chicken.
  • In a small saucepan over medium-high heat, mix together the peanut butter, coconut milk, kecap manis, and the rest of the Continental Chicken Satay Skewers Recipe Base. Bring to a boil, then reduce heat to low and simmer uncovered for 5 minutes until the sauce thickens.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill chicken for 3-4 minutes on each side until fully cooked.
  • Serve noodle salad on individual plates, arrange chicken on top, generously drizzle with satay sauce, and finish with a sprinkle of remaining chilli and fresh coriander.
