Satisfying stovetop stuffed peppers: Green bell peppers filled with savory ground beef, onion, and rice, cooked in flavorful tomato juice.
Ingredients:
  • 8 large green bell peppers
  • 6 tablespoons butter
  • 1 large yellow onion, diced
  • 1.5 pounds ground round
  • salt to taste
  • 1 cup uncooked white rice
  • 1 gallon tomato juice
Instructions:
  • Thoroughly wash peppers, then cut a circular incision around the stem to remove it, and scoop out the seeds. Rinse the inside of the peppers and discard the seeds and stems. Set peppers aside.
  • In a skillet over medium heat, melt butter and sauté onion until translucent, about 3 to 4 minutes. Transfer to a large bowl.
  • Combine ground beef with onions, seasoning with salt and pepper. Gradually incorporate rice while mixing well by hand. Fill peppers with the meat and rice mixture.
  • Drizzle oil in a large pot or two. Nestle stuffed bell peppers snugly into the pot(s), leaving a bit of room at the top. Fill with tomato juice until peppers are submerged. Shape any extra meat mixture into balls and drop them into the tomato juice.
  • Simmer gently, stirring occasionally, until peppers soften and sauce thickens, for about 2 to 3 hours.
