Quick and flavorful sauerbraten-inspired dish for two, without the hassle of a traditional recipe. No leftovers guaranteed!
Ingredients:
  • 1/2 lb extra-lean (at least 90%) ground beef
  • 2 tablespoons finely crushed gingersnap cookies
  • 2 tablespoons red wine vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg white
  • 2 1/2 cups uncooked egg noodles (4 oz)
  • 1/4 cup finely crushed gingersnap cookies
  • 2 tablespoons raisins
  • 3/4 cup reduced-sodium beef broth
  • 1 tablespoon red wine vinegar
Instructions:
  • Preheat the oven to 400°F. Combine all meatball ingredients in a small bowl and shape into 10 (1 1/2-inch) meatballs. Arrange them in a 13x9-inch pan and bake for 20 to 25 minutes until fully cooked and no longer pink in the center. Drain any excess liquid before serving.
  • Cook the noodles according to package instructions, then drain them without adding salt.
  • In a 2-quart saucepan, bring all sauce ingredients to a boil, stirring occasionally. Reduce heat to medium and simmer for 5 minutes, stirring occasionally, until thickened.
  • Combine the meatballs with the sauce and ladle over a bed of noodles.
