Sausage rolls

Homemade healthier version of a classic kids' favorite, better than fast food.
Ingredients:
  • 250g beef or pork sausage mince
  • 250g lean beef or pork mince
  • 1 brown onion, coarsely grated
  • 1 carrot, peeled, coarsely grated
  • 1 zucchini, ends trimmed, coarsely grated
  • 250.00 ml fresh breadcrumbs (made from day-old bread)
  • 2 sheets (25cm x 25cm) ready-rolled puff pastry, halved
  • 1 egg, lightly whisked
  • Tomato sauce, to serve
Instructions:
  • Preheat your oven to 200C and line an oven tray with baking paper.
  • Combine the minced meat, onion, carrot, zucchini, and breadcrumbs in a bowl. Mix thoroughly until fully incorporated. Season with salt and pepper to taste.
  • Lay the pastry on a tidy work surface.
  • Divide the mixture into quarters, then shape one portion into a log along the edge of a pastry sheet.
  • Roll the pastry dough to enclose the filling completely. Using a small knife, gently cut the roll in half and score the top of each piece. Place the rolls on the lined baking tray. Repeat the process with the remaining mince and pastry. Lightly brush each roll with a coat of beaten egg.
  • Place in the preheated oven and bake for 20 minutes, or until beautifully golden brown and fully cooked. Serve promptly with tomato sauce, if desired.
