Cheesy sausage, spinach, and egg bake - crispy top, quiche-like bottom. Perfect for brunch!
Ingredients:
  • 1 lb bulk Italian pork sausage
  • 1 tablespoon vegetable oil
  • 1 large onion, coarsely chopped (1 cup)
  • 1 large red bell pepper, coarsely chopped (1 1/2 cups)
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 2 boxes (9 oz each) frozen chopped spinach, thawed, drained
  • 2 cups shredded mozzarella or provolone cheese (8 oz)
  • 5 eggs, beaten
  • 1 1/4 cups milk
  • 1/2 cup butter or margarine, melted
  • 1 1/2 cups Gold Medal™ self-rising flour
  • 1/2 cup grated Parmesan cheese
Instructions:
  • Preheat oven to 400°F and generously grease a 13x9-inch (3-quart) glass baking dish. In a large 12-inch skillet, brown the sausage over medium-high heat for 8 minutes, stirring occasionally. Once browned, remove the sausage from the skillet and drain excess fat.
  • In the same skillet, warm oil over medium-high heat. Sauté onion and bell pepper for 5 minutes, stirring occasionally. Add mushrooms and continue to cook and stir for 3 minutes until veggies are tender. Combine with spinach and cooked sausage. Transfer mixture to a baking dish and top with cheese.
  • In a medium bowl, whisk together the topping ingredients until creamy. Pour the mixture over the filling in the baking dish.
  • Bake until the topping turns a gorgeous golden brown, approximately 35 to 40 minutes.
