Sausages with avocado and cheese

Ingredients:
  • 8 thick sausages
  • 1 ripe avocado, mashed
  • 250.00 ml grated cheese
  • 8 slices thin bacon (see Notes)
  • green salad, to serve
Instructions:
  • In a saucepan, submerge sausages in cold water and gently bring to a slow boil over low heat. Once boiled, remove from heat, cover, and let sausages sit in the water for 5 minutes until cooked through. Drain and allow to cool for 15 minutes before using.
  • Carefully create a pocket in each sausage using a sharp knife. Fill with avocado and cheese, then wrap with bacon and secure with a toothpick.
  • Heat up a barbecue plate, chargrill, or frying pan over medium heat. Cook the sausages, turning frequently, for 4 minutes until the bacon is crispy. Remove toothpicks before serving with a side of salad.
