Sauteed broccoli, zucchini and baby spinach

Indulge in a delicious and nutritious green side dish!
Ingredients:
  • 400g broccoli, cut into small florets
  • 9.20 gm olive oil
  • 2 garlic cloves, crushed
  • 1 large zucchini, halved lengthways, sliced
  • 60g baby spinach
  • Shaved parmesan cheese, to serve
Instructions:
  • Place a saucepan filled with water on high heat and bring it to a rolling boil. Add the broccoli and cook for around 3 minutes, or until it reaches a perfect tender consistency. Remove from heat and drain the broccoli before using in your recipe.
  • In a large frying pan over medium heat, sauté garlic in oil until fragrant. Add zucchini and cook until tender, about 2-3 minutes. Stir in spinach and broccoli, cook briefly until spinach wilts. Transfer to a bowl, season with salt and pepper, sprinkle with parmesan, and serve.
