Sauteed garlic broad beans & bacon with coriander

Ingredients:
  • 2 x 500g pkts frozen broad beans
  • 6 bacon rashers, rind removed, coarsely chopped
  • 82.50 ml chopped fresh coriander
Instructions:
  • In a heatproof bowl, pour boiling water over the broad beans and let sit for 5 minutes until thawed. Drain the beans and peel off the skins before discarding.
  • Preheat a spacious non-stick frying pan over high heat, then cook the bacon and garlic, stirring occasionally, for about 5 minutes until the bacon is golden and crisp.
  • Cook the broad beans until heated through, stirring occasionally for 3-4 minutes. Add the coriander, transfer the bean mixture to a serving bowl, and serve promptly.
