Crispy oven-baked chicken with colorful peppers and potatoes using Bisquick® mix.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/4 cup Dijon mustard
  • 3/4 cup Original Bisquick™ Baking Mix
  • 1 1/2 lb small red potatoes, cut into fourths
  • 1 medium bell pepper, cut into 1/2-inch pieces
  • 1 medium red onion, cut into 16 wedges
  • Cooking spray
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon paprika
Instructions:
  • Preheat the oven to 400°F and generously coat a 15x10x1-inch pan with cooking spray.
  • First, spread 2 tablespoons of mustard over the chicken and coat with Bisquick mix. Then, arrange one chicken breast in each corner of the pan and place the potatoes, bell pepper, and onion in the center. Brush the vegetables with the remaining 2 tablespoons of mustard. Next, coat both the chicken and vegetables with cooking spray, and sprinkle them evenly with cheese and paprika.
  • Bake uncovered for 35 to 40 minutes, stirring vegetables halfway through, until potatoes are tender and chicken juices run clear when cut at 170°F.
