Beef and veggie crepe filling with flavorful spiced sauce, a modern take on beef stroganoff.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound cubed beef stew meat
  • salt and ground black pepper to taste
  • 1 medium potato, peeled and cubed
  • 2 medium carrots, chopped
  • 3 stalks green onions, or more to taste, chopped
  • 1 cup milk
  • 1 cup warm water
  • 1.5 teaspoons beef bouillon granules
  • 2 tablespoons all-purpose flour, or more as needed
  • 0.25 cup dry white wine
  • 1.5 teaspoons Worcestershire sauce
  • 0.25 teaspoon garlic powder, or to taste
  • 0.25 teaspoon onion powder, or to taste
  • 0.25 teaspoon dried cilantro, or to taste
  • 0.25 teaspoon dried rosemary, or to taste
  • 1 head broccoli, cut into florets
Instructions:
  • In a saucepan over medium-high heat, warm oil. Add beef and season with salt and pepper. Sauté until browned (4-5 minutes). Add potato, carrots, and green onions, then pour in milk. Simmer over medium heat until vegetables are tender.
  • Combine bouillon granules with 1/2 cup water. Mix flour with remaining water until smooth. Pour both mixtures into a saucepan and stir well. Add wine, Worcestershire sauce, garlic powder, onion powder, cilantro, and rosemary. Cook and stir occasionally for 10 minutes until vegetables start to soften.
  • Introduce the broccoli and lower the heat to medium-low. Let everything gently simmer until the vegetables and beef reach a tender perfection, approximately 10 to 15 minutes more.
  • Drizzle sauce over or inside crepes before serving.
