Cheesy zucchini muffins with crispy bacon for a burst of flavor.
Ingredients:
  • 1.75 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.25 cup butter, melted
  • 1 cup shredded unpeeled zucchini
  • 1 clove garlic, minced
  • 0.75 cup shredded Cheddar cheese
  • 0.25 cup freshly grated Parmesan cheese
  • 4 slices bacon, cooked crisp and crumbled
Instructions:
  • Preheat your oven to 350 degrees F (175 C) and generously grease 12 muffin cups with cooking spray.
  • Combine the flour, baking powder, baking soda, and salt in a bowl.
  • Combine butter, egg, milk, zucchini, and garlic in a bowl until smooth. Gradually add flour mixture, stirring well. Gently mix in Cheddar cheese, Parmesan cheese, and bacon. Pour batter into muffin cups.
  • Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool slightly in the muffin cups before serving warm. Remember to refrigerate any leftovers.
