Zucchini and cheddar scones

Enjoy these savory zucchini scones for a perfect picnic treat.
Ingredients:
  • 1 small (about 100g) zucchini
  • 300g self-raising flour
  • 5.00 gm caster sugar
  • 120g cheddar cheese
  • 62.50 ml (3 tbsp) finely chopped chives
  • 250ml buttermilk
  • Sliced ham, to serve
  • Tomato relish, to serve
Instructions:
  • Preheat the oven to 200°C. Grease and flour a 20cm square cake or slice pan. Grate the zucchini, then press out extra moisture with paper towel.
  • Mix zucchini, flour, sugar, cheddar, chives, and 1/2 teaspoon of salt in a large bowl. Slowly pour in the buttermilk and knead with your hands until a soft dough forms. Transfer the dough onto a lightly floured surface and shape it into a 2cm-thick piece.
  • Using a 5.5cm-round pastry cutter dusted with flour, cut out rounds from the dough and place them slightly touching in the pan. Lightly re-roll the dough scraps to make more scones (you should end up with 16). Brush the scones with extra buttermilk. Bake for 18-20 minutes until they turn golden. Enjoy with ham and relish.
