Delicious one-skillet meal featuring ground beef, zucchini, mushrooms, tomatoes, olives, and Cheddar cheese - perfect for family dinner.
Ingredients:
  • 1 pound lean ground beef
  • 1 medium sweet onion, finely diced
  • 1 (14.5 ounce) can Italian-style stewed tomatoes
  • 1 (8 ounce) package sliced white mushrooms
  • 1 (6.5 ounce) can tomato sauce
  • 1 (6 ounce) can sliced black olives
  • 2 cloves garlic, minced
  • salt and ground white pepper to taste
  • 4 medium zucchini
  • 1 (8 ounce) package shredded sharp Cheddar cheese
Instructions:
  • Brown the beef and onion in a hot skillet until beef is crumbly and onion is translucent, about 5-7 minutes. Discard any excess grease.
  • Crush stewed tomatoes in a bowl and transfer to skillet. Add mushrooms, tomato sauce, olives, garlic, salt, and pepper. Simmer uncovered until liquid reduces, 20 to 30 minutes.
  • First, cut the zucchini into 1/2-inch slices and mix with the beef. Cook until the zucchini is tender yet firm, for about 5 to 7 minutes. Then, add Cheddar cheese and cook until melted, around 3 to 4 minutes.
