Savor Italian-inspired zucchini boats filled with seasoned ground beef and melted mozzarella.
Ingredients:
  • 1 drizzle olive oil
  • 1 extra large zucchini, quartered lengthwise, seeds scooped out
  • salt and ground black pepper to taste
  • 2 pounds ground beef
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 3 tablespoons dried basil
  • 3 tablespoons dried oregano
  • 4 teaspoons garlic salt
  • 1 (6 ounce) can tomato paste
  • 1 cup water
  • 0.25 cup chopped fresh basil, or to taste
  • 1 cup shredded mozzarella cheese, or to taste
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and get a baking sheet lined with aluminum foil ready to go.
  • Drizzle zucchini with olive oil and generously season with salt and pepper before placing them on the baking sheet.
  • Roast in the oven until zucchini is easily pierced with a fork, for 30 to 45 minutes.
  • Cook ground beef with onion and garlic in a large skillet over medium-high heat until browned and crumbly, about 5 to 7 minutes. Add dried basil, dried oregano, and garlic salt, then stir.
  • In a small bowl, stir together tomato paste and water until smooth. If necessary, remove any fat from the beef mixture. Pour in the tomato paste mixture and warm it up. Turn off the heat, toss in fresh basil leaves, and mix until fully incorporated.
  • Take out the zucchini from the oven, keeping it on. Fill each zucchini quarter generously with the meat mixture and top each with mozzarella cheese. Place them back in the oven and bake until the cheese is melted, around 5 minutes.
