Air fryer ratatouille with zucchini, peppers, eggplant, and herbs - easy vegetarian perfection!
Ingredients:
  • 0.5 small eggplant, cut into cubes
  • 1 zucchini, cut into cubes
  • 1 medium tomato, cut into cubes
  • 0.5 large yellow bell pepper, cut into cubes
  • 0.5 large red bell pepper, cut into cubes
  • 0.5 onion, cut into cubes
  • 1 fresh cayenne pepper, diced
  • 5 sprigs fresh basil, stemmed and chopped
  • 2 sprigs fresh oregano, stemmed and chopped
  • 1 clove garlic, crushed
  • 1 tablespoon white wine
  • 1 teaspoon vinegar
Instructions:
  • Preheat the air fryer to 400°F (200°C).
  • Combine eggplant, zucchini, tomato, bell peppers, and onion in a bowl. Toss with cayenne pepper, basil, oregano, garlic, salt, and pepper. Ensure even distribution. Drizzle with oil, wine, and vinegar, coating all vegetables evenly.
  • Transfer the vegetable mixture into a baking dish and place it in the air fryer basket. Air fry for 8 minutes, stir, then air fry for an additional 8 minutes. Stir again and keep air frying until tender, stirring every 5 minutes, for about 10 to 15 more minutes. Turn off the air fryer but leave the dish inside. Allow it to rest for 5 minutes before serving.
