Savory baked pancake with salmon and Greek yogurt for a lighter breakfast option.
Ingredients:
  • 60ml (1/4 cup) milk
  • 20.00 ml finely grated parmesan
  • 5.00 gm butter
  • Sour cream, to serve
  • Smoked salmon to serve
  • Snow pea sprouts, to serve
  • Finely grated lemon rind, to serve
Instructions:
  • In a 13cm ovenproof frying pan, place it in a preheated oven at 200C/180C fan forced. Whisk together milk and egg in a jug, then add flour and parmesan, whisking to combine. Season to taste.
  • Use an oven mitt to take the pan out of the oven. Add butter, swirl to coat the base, pour in the mixture, and bake for 15 minutes until puffed and browned around the edges. Let it cool a bit, then serve with sour cream, smoked salmon, snow pea sprouts, dill, and lemon zest on top.
