Try a twist on spaghetti bolognese by serving the mince on crispy potato wedges - a kid-friendly favorite!
Ingredients:
  • 2.50 gm mild paprika
  • 800g desiree potatoes, cut into wedges
  • 36.40 gm olive oil
  • 1 large brown onion, finely chopped
  • 500g beef mince
  • 400g diced tomatoes
  • 44.40 gm tomato paste
  • 48.80 gm worcestershire sauce
  • 382.50 gm beef stock
  • 100g button mushrooms, thinly sliced
  • 1 medium carrot, grated
  • 1 green capsicum, finely chopped
  • 40.00 ml gravy powder
  • Finely chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced. Combine paprika, turmeric, potato, and half the oil in a baking dish, ensuring everything is well coated. Bake for 35 to 40 minutes, turning occasionally until golden and tender.
  • Next, heat the remaining oil in a saucepan over medium-high heat. Saute the onion and minced meat until browned, breaking up the mince with a wooden spoon, for about 6 to 8 minutes. Add tomato, tomato paste, Worcestershire sauce, stock, mushroom, carrot, and capsicum. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 25 to 30 minutes until thickened. Finally, stir in the gravy powder.
  • Divide the mixture evenly among bowls and top with fresh parsley before serving.
