Savoury mince

Savory veggie and herb spread for toast.
Ingredients:
36.40 gm olive oil
1onion, chopped
2garliccloves, crushed
500g beef mince
100g button mushrooms, sliced
1carrot, diced
1stalkcelery, trimmed and diced
400g can diced tomatoes
125.00 gm water, or stock or red wine
22.20 gm tomato paste
20.00 ml parsley, chopped, plus extra to serve
1long baguette, cut into 4, halved and toasted
Mixed leaves, to serve
Instructions:
In a large frying pan over medium heat, sauté the onion and garlic until the onion is tender, about 2-3 minutes.
Combine the mince with the onion mixture and cook for 4-5 minutes until thoroughly browned, using a spoon to break it up while cooking.
Combine mushrooms, carrot, and celery into the mixture, ensuring they are well blended. Stir and cook for 5 minutes, continuously stirring.
Combine tomatoes, water, and tomato paste in a pot. Season to your liking and bring to a boil. Lower the heat and simmer for 10 minutes or until vegetables are soft. Stir in parsley. Spoon over toast, sprinkle with more parsley, and serve with mixed greens on the side.
