Savoury scones

Cheesy, mildly spicy scones pair perfectly with a ploughman's lunch or a simple smear of butter.
Ingredients:
  • 450 g self-raising flour
  • 150 g butter
  • 2 free-range eggs
  • 4 tablespoons milk plus a little more for brushing
  • ½ teaspoon mustard powder
  • ½ teaspoon ground cumin
  • 50 g Cheddar grated
Instructions:
  • 1. Preheat the oven to 200ºC/400ºF/gas 6. 2. Blend the flour and butter in a food processor until they resemble breadcrumbs. 3. Transfer the mixture to a bowl and create a well in the center. 4. In another bowl, whisk the eggs and milk together along with salt and pepper. Pour into the well. 5. Stir to combine the flour mixture with the eggs and milk, adding more milk as needed, until a soft dough forms. 6. Divide the dough into 3 equal parts. 7. Flatten each piece on a work surface and sprinkle mustard powder on one, cumin powder on another, and grated cheese on the last one. 8. Roll up each piece and gently knead to incorporate the flavorings. Be careful not to overmix. 9. Flatten the dough again to about 2.5cm thick. 10. Cut out 2 circles from each piece using an 8cm cutter or the rim of a glass, then place them on a baking sheet upside down. 11. Brush the tops with extra milk and bake for 15 minutes until golden brown and puffed.
