Delicious savory scones packed with ham, bell pepper, and cheese - perfect for lunch or a snack on the go!
Ingredients:
  • 600g self-raising flour
  • Pinch ground cayenne pepper
  • 100g chilled unsalted butter, cubed, plus extra to serve
  • 150g ham, finely chopped
  • 6 spring onions, finely chopped
  • 1/2 red capsicum, finely chopped
  • 1/2 green capsicum, finely chopped
  • 240g tasty cheese
  • 375ml milk
Instructions:
  • Preheat the oven to 180°C fan-forced (200°C conventional), then prepare the baking tray by greasing and flouring it.
  • In a large bowl, sift flour and add cayenne pepper. Rub butter into the mixture with your fingertips until it resembles fine breadcrumbs. Stir in ham, spring onion, capsicums, and 1 1/2 cups of tasty cheese. Season with salt and pepper. Add milk gradually, cutting it in with a knife until just combined; avoid overmixing.
  • Transfer the mixture onto the prepared tray and shape it into a 25cm round. Cut it into eight wedges, separate them slightly, and brush the tops with extra milk. Sprinkle the remaining 1/4 cup cheese on top. Bake for 20-25 minutes until golden.
  • Enjoy your dish while it's warm, generously topped with additional butter.
