Indulge in Chef John's scallop gratin with fresh scallops, creamy creme fraiche, and aromatic tarragon.
Ingredients:
  • 2 tablespoons melted butter, or as needed, divided
  • 0.25 cup creme fraiche
  • 0.25 cup white wine
  • 1 pinch cayenne pepper, or to taste
  • 1 pinch kosher salt, or to taste
  • 8 dry-pack sea scallops
  • 2 tablespoons chopped fresh tarragon
  • 2 tablespoons finely grated Parmesan cheese
Instructions:
  • First, heat your oven to 450 degrees F (230 degrees C). Then, use 1 tablespoon of melted butter to brush two small gratin dishes.
  • In a bowl, combine creme fraiche, white wine, lemon zest, cayenne pepper, and kosher salt until smooth. Add scallops and toss to coat; let sit for 5 minutes to meld flavors. Divide scallops between gratin dishes, pour over remaining sauce, sprinkle with tarragon and Parmesan, then drizzle with extra butter.
  • Bake the scallops in the preheated oven for 4 minutes, then broil until golden brown, slightly springy, and opaque, for an additional 2 to 4 minutes.
