Spicy scalloped potatoes - a versatile side dish for any meal.
Ingredients:
  • olive oil cooking spray
  • 3 medium russet potatoes
  • 2 (4 ounce) cans diced green chiles
  • 2 cups heavy cream
  • 4 tablespoons butter, melted
  • kosher salt and freshly ground black pepper to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) while generously coating a round, glass pie pan with olive oil cooking spray.
  • Thinly slice the potatoes using a mandoline and keep them to the side.
  • Combine the contents of both cans of green chiles in a bowl. Use an immersion blender to pulse them until desired consistency is reached. Stir in cream and butter, and season with salt and pepper to taste.
  • Start by arranging a layer of potatoes at the bottom of the pan, then drizzle some of the creamy mixture over them. Repeat the layering process until all the potatoes are used. Finish by pouring the remaining cream mixture over the top.
  • Place the dish in the preheated oven and bake until the tortilla is fully set, approximately 1 hour and 15 minutes. Allow it to cool slightly, then slice and serve.
