Schnitzel sandwiches

Beat midweek blues with this delightful dinner dish.
Ingredients:
  • 57.50 gm rice bran oil
  • 1 large brown onion, thinly sliced
  • 4 (150g each) crumbed beef schnitzels
  • 430g loaf Turkish bread
  • 82.50 ml tomato relish
  • 61.88 gm whole-egg mayonnaise
  • 8 butter lettuce leaves
  • 2 small tomatoes, thinly sliced
  • 4 slices vintage cheddar cheese
Instructions:
  • In a large frying pan, heat 1 tablespoon of oil over high heat. Sauté the onion, stirring occasionally, for 4 to 5 minutes until softened. Transfer to a plate.
  • Heat the remaining oil in a skillet over medium-high heat. Cook the schnitzels for 2 minutes on each side for medium doneness, or until cooked to your desired preference. Then, transfer them to a plate lined with paper towels.
  • Quarter the bread and then split each piece in half. Toast until golden brown. Spread half of the toast pieces with relish and the remaining half with mayonnaise. Arrange the mayonnaise-topped pieces on plates and top each with lettuce, tomato, schnitzel, onion, and cheese. Place the relish-topped toast on top to sandwich the ingredients. Cut the sandwiches in half and serve.
