Upgrade your lunch game with a crispy homemade chicken schnitzel sandwich on rolls with fresh lettuce and zesty mayo, lemon juice, and mustard.
Ingredients:
  • 2 skinless, boneless chicken breasts, halved lengthwise
  • salt and ground black pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup dry bread crumbs
  • 5 tablespoons vegetable oil
  • 2 tablespoons mayonnaise
  • 4 sandwich rolls, split
  • lemon, juiced
  • 4 dashes hot pepper sauce (such as Tabasco®)
  • 4 leaves chopped romaine lettuce
  • 1 tablespoon mustard
Instructions:
  • Lay the chicken breast on a flat surface between two sheets of plastic wrap. Use a meat mallet to pound it evenly. Season with a generous amount of salt and pepper to taste.
  • Set up your breading station: Place flour in a large flat dish, whisk eggs in a shallow bowl, and pour bread crumbs into another flat dish.
  • Coat each piece of chicken in flour, dip in beaten eggs, and cover with bread crumbs for a crispy coating.
  • Heat your oven to a cozy 200 degrees F (95 degrees C).
  • In a large skillet over medium-low heat, heat oil. Cook batches of breaded chicken until golden brown and cooked through, about 5 minutes per side. Drain on an ovenproof plate lined with paper towels and keep warm in the oven.
  • Spread a generous layer of creamy mayonnaise on the bottom half of each sandwich roll. Add a perfectly crispy breaded chicken piece, drizzle with a hint of zesty lemon juice, sprinkle with a touch of hot sauce, and place a fresh lettuce leaf on top. Spread tangy mustard on the top half of each roll and then gently press the top halves over the lettuce to create mouthwatering sandwiches.
