Chicken schnitzel and tomato salsa sandwich

Quick and delicious summer lunch ready in 15 minutes.
Ingredients:
  • 4 (about 350g) chicken breast schnitzels
  • Olive oil spray
  • 2 vine-ripened tomatoes, coarsely chopped
  • 1 Lebanese cucumber, coarsely chopped
  • 1 large fresh green chilli, finely chopped
  • 1 small garlic clove, finely chopped
  • 125.00 ml fresh coriander leaves
  • 8 slices crusty bread
  • 39.60 gm low-fat mayonnaise
  • 4 butter lettuce leaves
Instructions:
  • Season the chicken generously with salt and pepper, then give it a light spray of olive oil. Sear the chicken in a hot non-stick pan for 3-4 minutes per side until beautifully golden and fully cooked.
  • Combine ripe, juicy tomatoes, crisp cucumbers, zesty lemon juice, spicy chili, fragrant garlic, and fresh coriander in a bowl. Mix well and season with a pinch of salt and a crack of black pepper to taste.
  • Distribute half of the bread onto serving plates and generously spread with the creamy mayonnaise. Arrange the fresh lettuce leaves and savory chicken over the bread. Finish by topping with the flavorful tomato mixture and remaining bread for a delightful serving.
