Ingredients:
  • 500.00 ml fresh breadcrumbs
  • 82.50 ml finely grated parmesan cheese
  • 20.00 ml finely grated lemon rind
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 1 tsp garlic powder
  • 125.00 ml White Plain Flour
  • 20.60 gm Full Cream Milk
  • 550g chicken breast schnitzel (uncrumbed)
  • Vegetable oil, for shallow-frying
Instructions:
  • Mix breadcrumbs, parmesan, lemon rind, parsley, and garlic powder on a plate. Season generously with salt and pepper. Spread flour on a separate plate. Whisk together egg and milk in a shallow bowl.
  • Dredge chicken in flour, then coat in egg mixture, followed by breadcrumb mixture. Transfer to a plate. Repeat with remaining chicken.
  • In a hot frying pan with oil, sear chicken in batches for 4 to 5 minutes per side until golden and fully cooked. Place on a paper towel-lined plate to drain excess oil. Serve and enjoy!
