Crispy schnitzel, crusted with panko and parmesan for irresistible texture and flavor.
Ingredients:
  • 250.00 ml dried panko breadcrumbs
  • 40.00 ml chopped fresh flat-leaf parsley
  • 3 tsp finely grated lemon rind
  • 62.50 ml plain flour
  • 550g chicken schnitzel
  • Alfa One rice bran oil, for shallow-frying
  • steamed green beans, to serve
  • 260.00 gm Fresh tomato sauce (see related recipe)
  • 8.00 gm brown sugar
  • 2 tsp balsamic vinegar
  • 11.00 gm sweet chilli sauce
Instructions:
  • Mix breadcrumbs, parmesan, parsley, and lemon zest on a plate; season with salt and pepper. Beat egg in a bowl. Spread flour evenly on a plate. Dredge 1 chicken piece in flour, shaking off any excess. Dip in egg, then coat in breadcrumb mixture. Transfer to a separate plate. Repeat with remaining chicken, flour, egg, and breadcrumbs. Cover and refrigerate for 30 minutes before cooking.
  • Prepare the Tomato Relish by combining tomato sauce, sugar, vinegar, and sweet chili sauce in a saucepan over medium-high heat. Bring to a boil, then simmer over medium heat for 25 minutes until thickened. Remove from heat.
  • Heat oil in a deep frying pan over medium-high heat. Fry chicken in 2 batches for 5 minutes each side until golden and cooked through. Drain on paper towel. Serve schnitzel with Tomato relish and green beans.
