Soft chicken wraps with tomato salsa

Create a mouthwatering chicken wrap with crispy schnitzel, fresh salsa, cool sour cream, crunchy cucumber, crisp lettuce, and melty cheese for a simple and delicious lunch option!
Ingredients:
  • 4 chicken breast schnitzel plain (about 600g)
  • 250g cherry tomatoes, diced
  • 1 lime, juiced and finely grated rind, plus wedges to serve
  • 1 long red chilli, seeded, finely chopped
  • 62.50 ml coriander, chopped, plus extra sprigs, to serve
  • 2 spring onions, thinly sliced
  • 8 mini wraps
  • 2 baby cos lettuces, roughly shredded
  • 1 Lebanese cucumber, cut into batons
  • 125.00 ml tasty cheddar shredded
  • 77.55 gm light sour cream
Instructions:
  • Preheat the oven to 220C (200C fan-forced) and line a baking tray with paper. Arrange the chicken on the tray and bake for 18-20 minutes until golden and fully cooked. Slice into strips before serving.
  • In a small bowl, mix together tomato, lime zest and juice, chili, chopped coriander, and spring onion. Season to taste.
  • Place each tortilla on a cutting board and layer with lettuce, cucumber, tomato salsa, chicken, shredded cheese, and sour cream.
  • Garnish with additional fresh coriander and lime wedges for a vibrant finish.
