Succulent marinated chicken and charred veggies stuffed in quick grilled tacos.
Ingredients:
  • 1/4 cup lime juice
  • 1/4 cup vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 red onion, cut into 1-inch wedges, separated into layers
  • 1 large red or green bell pepper, cut into 1-inch squares
  • 8 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count), heated as directed on package
  • 1/2 cup thick & chunky salsa
Instructions:
  • Combine lime juice, oil, garlic, cumin, and salt in a bowl. Place chicken and 1/4 cup of the mixture in a sealed bag, shake well to coat the chicken, and refrigerate for 30 minutes. Reserve the remaining lime juice mixture for later use.
  • Preheat the grill on medium heat. Take the chicken out of the marinade and throw away the marinade. Thread the chicken, onion, and bell peppers onto 8 (12-inch) skewers. Place the skewers on the grill, cover, and cook for 10 to 11 minutes, turning occasionally, until the chicken is cooked through and the vegetables are cooked to your preference.
  • Transfer the kabobs to a large plate and generously drizzle with the lime juice mixture. Make sure to coat everything evenly. Carefully slide the chicken and vegetables off each skewer onto a tortilla and serve with salsa.
